Wooden Batidor/Molinillo made in the Philippines
Froth is key to making the perfect hot chocolate or mocha. In fact, some Mesoamericans thousands of years ago thought the froth was the most important part of their drinking chocolate. Today in places like Mexico (molinillo) and even The Philippines (batidor) some still mix their drinking chocolate with this. There are many ways to build froth in your drinks at home, and you can read about some ideas here. The rotating frother is one such tool.
Add your grated chocolate or cocoa powder, and pour in some of your hot milk and beat until a froth develops. It’s best to start building the front when the line of the water is somewhat below the head of the batidor/molinillo. Then once you have a good froth, add more milk and continue to froth until satisfied.
Rinse well and allow to dry thoroughly after each use.
