I always encourage people to get their information on chocolate and cacao as directly from the source as possible, and to back up what they hear or read from others with original work. This is why I spend time with research summaries - so that you can access better information than is available in the realm of bean-to-bar. Unfortunately, the academic world is a for-profit industry, where research is heavily tied-up in bureaucracy and locked behind paywalls.
