Chocolate Research

One of the greatest challenges I faced early on in my career in chocolate was finding solid books or resources on chocolate, particularly the science of chocolate. Most of the books, online content, or "experts" in the field did not have much evidence, science, or research to back up their claims.

Thankfully with my background in biology I was able to delve deeper and find the primary research behind many of the claims, books, and information online. The problem is, this information which forms the basis for much of what we read is inaccessible to the public, or is too complicated for some people to read.

This is why I decided to start a research summary blog. Granted, this is only a sample of what I've come across, but I'm doing my best to bring you more content when I can. The idea here is to really get a grasp of what the science says, and to make decisions based on what you know instead of what you are told. Enjoy!
