The world of dark chocolate bars, even the pure dark chocolate bars that I have enjoyed for some 25 years, is vast. Most countries within 20 degrees north and south of the Equator grow cacao, and practically all countries make and sell dark chocolate bars from that cacao. With the low barrier to starting a single-origin or bean-to-bar chocolate company, and the growing interest globally in doing so, gatekeepers or tastemakers like Geoseph Domenichiello are essential for discerning customers. His selection and curation of the best and most interesting bars are exemplary and endlessly fascinating, and his service is superb, even when shipped across a border. Until I have the opportunity and privilege of visiting his shop up north, this note will have to serve as my compliment on his excellent work in a very specialized field.
