Made with cacao from Costa Esmeraldas, Ecuador.

Ingredients: Cocoa nibs, Organic Cane Sugar, Cocoa Butter, Icewine Lees.

Suggested Flavour Notes: Grape, Raspberry Jam, Sweet Cream, Chocolate Cake, Wild Honey. Others also get woody, floral, currant jam.

The cocoa nibs from Costa Esmeralda cocoa beans are roasted and then added to an oak barrel from winemaker J-L Groux from Niagara-on-the-Lake, ON. The barrel has residual yeast and grape skins (called “lees”) from the icewine making process. The nibs are left in there for 3 months, from which they are then ground up to make chocolate.
