Truffle Making - Using Pre-Made Shells

This is for those who wish to make truffles using pre-made round hollow truffle shells.

We will make the ganache, fill the shells, allow them to set (likely pause the class), cap them with chocolate, and then roll them in chocolate.

+ What Equipment or ingredients will I need?

A pot or two to boil cream

A sieve or strainer

Rubber spatula

Whisk

Medium and small bowl

Couple small table or tea spoons

Bain-Marie or Microwave to melt chocolate if needed

Plastic piping bag or squeeze bottle

Plastic piping bag or parchment paper to cap truffle shells (optional)

Wide scrapers if needing to cap bonbon shells (optional)

Plastic gloves to roll truffles

+ How Long Should I Book?

I would book at least 2-2.5 hours depending on how many ganaches you wish to make and shells you wish to fill. This can include the time to cap and roll the truffles as well.

+ Is This Good For Beginners?

This is more intermediate. You will have to be pretty confident in your tempering, and be good at your piping skills.
