Winnowing

Winnowing is a beginner chocolate maker’s greatest… annoyance. If you don’t have a winnower, then you have to either hand peel your cacao, or crus them and winnow them by hand using a wide bowl and a hair dryer to blow away the light husks from the nibs.

However, the hard work makes the chocolate taste THAT much better when it’s all done!
