Tom & Monica have taken on quite the project of being a fine chocolate maker. Their range of single origin chocolate is made at their 225 year old farm in Sudbury, Massachusetts. The chocolate is made from bean to bar, having full control over the flavour profile of the chocolate.
They are also one of the very few craft chocolate makers to actually press their own single origin cocoa butter! This is a feat in itself for small-scale makers.
Their single origin dark chocolate bars have a balanced and unique flavour to each origin. They also have a lovely range of flavoured chocolate bars, their Putnam Whiskey a big favourite of mine and my tasting guests!
They also put a great deal of work into their website which offers you an in-depth look into where their cacao comes from and information and transparency about the entire process.
