Chocolate is not a childish decadence.

In our world today, due to at least a century of the way chocolate was marketed, chocolate has become associated with a sweet for children. Not a food with the same sophistication as coffee, tea, wine, or cheese.

The truth is, fine chocolate is even more complex and involved than any of those I mentioned. The problem is, most of the world (including most chocolate enthusiasts) still do not understand nor appreciate this fact.

The genetic complexity of cacao surpasses that of grapes, coffee and tea. The process of making chocolate is (with no disrespect) far more involved and labour intensive than coffee, tea, wine, and fine cheese. The storage and shelf life of chocolate is more finicky than coffee, tea, and wine. Above all, the range and various of truly natural flavour notes within fine chocolate far surpass the range found in coffee, tea, and especially wine. The problem is, most don’t experience this, and so assume otherwise. To those who understand what I’m saying, you can appreciate the work that needs to be done. For those who don’t understand what I’m saying, I will just say there is a world of flavour and satisfaction untapped.
