We love this website, the dark chocolate and, most of all, Geoseph, the site owner. He loves chocolate and is incredibly generous in sharing his encyclopedic knowledge of all aspects of the subject. And he has a fantastic selection of bean to bar chocolate bars. Every month we buy 10-12 bars and then each evening after dinner, we have small pieces from three or four bars and talk about the taste of each. We've been doing this for a year now and have developed a little sophistication about the different tastes of good chocolate. It's been a wonderful and delicious education and we are just beginning. And learning more about chocolate and its different personalities has made us more discerning when it comes to eating sweets. We eat far less than we did before we took up the bean to bar habit.
