For my wife and I's Christmas present, we had a virtual chocolate tasting.
We had a drink to start (how chocolate was originally enjoyed), then learned about the history of it, and how it is made. We then had cocoa nibs directly from the beans from 2 different countries, and then the same nibs ground for 8 hrs and 36 hours, just to see the differences the growing and making process can make (and its a big difference)
Then, we had 4 samples of pure chocolate from different makers, and then 4 more samples that had different adjuncts.
Throughout the entire tasting, Geoseph, the chocolatier would give us advice on how to enjoy and pick up differences from each bar.
We had so much fun, and would highly recommend him and this tasting to anyone that likes good chocolate.

Geoseph is an amazing instructor! I signed up for one his virtual classes so I could learn to temper chocolate, the old fashioned way. He was very thorough in explaining the process and was patient with my lack of experience. I can now temper bars and shells for bonbons! It was a fun class and I highly recommend signing up for one. I can’t wait to do another session and master the art of chocolate!

I took Geoseph's dark chocolate tasting sommelier masterclass and it was amazing! So informative, answered every question, was amazing to taste all the different chocolates and learn how to actually taste and analyze them. I learned so much about chocolate and its history in general and had a lot of fun, and it was a small enough group that we really did get a lot of individual attention, helping us learn even more. Geoseph is passionate about chocolate and very engaging, so its also entertaining. He sends you off with tools to be able to keep learning and practicing on your own as well as a free follow-up quiz and video chat session for any future questions. So, the course is very thorough! I highly recommend it.

The bean to bar experience is so much fun! I highly recommend this child-friendly experience with Geoseph. You learn about the beginning of how chocolate consumption started and you get to see the bts of true chocolate making! The neurogastronomy experience is a delightful experience as well! You will learn to look and experience chocolate in a whole new way afterwards.

Just as I was enjoying my piece of Hershey milk chocolate bar, this class came to be and changed my view about dark chocolate. Who knew there’s an art of tasting and enjoying dark chocolate?! Also learned an in-depth history of cacao and how it evolved to what we now consume as chocolate bars. Oh and I love how we got to try some cocoa pod juice, which I wish is readily available here in Vancouver, but the host got it just for us to try it during the tasting class!! I’d highly recommend anyone to go and check it out, from the curious to the foodies!

I love chocolate since I was a kid because chocolate is sweet. But now I know chocolate is not just sweet. I never knew about origin of cacao beans, the history of chocolate, how to make chocolate and even how to taste chocolate in a proper way. Every chocolate has its own personality. Different look, smell, taste, texture, and even sound. Very interesting to know about what you eat. Geoseph has so much knowledge and passion for chocolate!
